Will all truffles ripen? You will find some golden guidelines that ought to be followed to get probably the most in the wonderful flavor of the truffle. The more traditional rakers say they're being thrown under the bus by elites who don't understand that shallow raking has been done for decades without evidence of destruction, and that dogs don't necessarily find riper truffles. When we say it like that, it seems like a truffle is like any other fungi, but there’s more to that. Dogs are being trained to do that job here, too, especially when it comes to hunting the Oregon black truffle (Leucangium carthusianum), which is much more scattered in the forest and grows at greater depths than the Oregon white. In 2015, the market price for the Oregon winter white truffle is expected to reach $560/lb., up from $120/lb. He’ll serve each with 3 grams of shaved truffles, for which he’ll charge $100, a higher price than in years past. He forages for mushrooms at least once a month, an activity pursued since he was seven years old.

Standing about ten feet apart, we each cast our rake across a bed of fir needles, white truffles and pray for mushrooms. This makes it much easier for fresh black truffle local foragers because all they need is a shallow-tined rake to pull aside the duff under the tree, revealing the glowing white truffles underneath. "Sometimes you find them right away," says Czarnecki, "other times they make you really look for them." If you find one truffle near a tree, you’ll usually find more, he adds. One camp decries the disturbance of large areas of the forest floor when rakes are used and claims that properly trained dogs dig only for ripe truffles. Most molds, for instance, are in this phylum: they usually don't produce a large mushroom - they grow in circles like all fungi, so if you leave your coffee out for a few days, you'll notice the mold grows radially out from a single point. Across the path, Chef Paley likens the truffle hunt to foraging for morels, a mushroom with similarly elusive properties.

"With foraging comes a responsibility and stewardship to the forest," says Czarnecki. "Isn’t it human nature," says Paley, "to go after things that are hard to get? "My father always describes himself as a mushroom hunter who likes to cook," he says. Truffle Hunter is based in the UK and they are a leading supplier of fresh truffles and truffle products. By 11 a.m. at the latest, they are ready to be loaded onto a plane, which arrives at JFK around 6 p.m. Small but precious, truffles are spore-bearing fungi that live their entire lives underground. Easy mode doesn’t make it instantly clear what FOV or framerate you’re shooting in, but it’s 5.3K/30 at 16:9 according to a test video and the small text in the "speed" shortcut menu that I’ll get to in a minute. For a moment, we stand in the lush forest, and it’s serenely quiet. There are people who fish in my family, but I can't stand it. Since black truffles are typically less expensive than white ones, the typical home cook can more easily afford them.

More typically however, white truffles sell for $1500-$4000 USD per lb. A few days after the Eugene trip, I visited Jack Czarnecki, Oregon truffle guru and producer of Oregon's only natural white truffle oil. Langdon Cook, author of "Fat of the Land" and a master forager, said he learned his technique for ripening and storing Oregon truffles from Jack Czarnecki. As British author Elisabeth Luard writes in her book Truffles, part of the magic of the mushroom is how it evades us: "Let me put the case for treasuring the truffle. Short of foraging your own Oregon truffles, you can find them from Springwater Farm at the Portland Farmers Market and the Hillsdale Farmers Market, at selected New Seasons Markets and at Pastaworks and other specialty food stores. Although truffles grow underground, the white truffles, especially, are found very close to the surface, where the soil is looser. Spring white truffles are harvested from May through July, and Oregon black truffles are hunted from December through March, depending on weather and other factors. Of the 30 Northwest truffle species, only three are harvested for culinary use-two whites and a black.
